Break Open ZOMBIE GUTS Cookies || Feeling Peckish

Break ’em open and watch ’em ooze…

 

Zombie Cookies

Cookies

*Makes 16 break open cookies or 48 regular cookies

1 cup brown sugar
1.5 cup butter
1.75 cup molasses
2 tsp ground cinnamon
3 Tbsp ground ginger
2 tsp ground nutmeg
1 tsp ground cloves
6.5 cups All purpose flour

1/2 tsp Gel Black food colouring

Icing:

3 T meringue powder

4 cups powdered sugar

4 -5 T warm water

Brown gel food colouring

Moss green gel food colouring

Yellow gel food coloring

Strawberry Sauce for guts

Part 1:

Preheat your oven to 350˚F
Beat the butter, sugar, molasses, food colouring and spices on low speed for a couple of minutes. Add the flour and mix until it forms a nice dough.

Roll out the dough fairly thin (4mm) and cut out the ginger bread men re-rolling the scraps. Remember you will need 3 men per cookie.

Place the individual men on a baking sheet covered in parchment and before placing it in the oven cut out a circle from the stomach of every third man. Bake for 15 minutes and then let cool completely.

On a piece of paper draw out your zombie using the cookie cutter as an outline. Place a piece of parchment paper over top to create a template. Make 1/2 of the icing by combining the sugar, meringue powder and water. Beat for 7-10 minutes until stiff. Add water for desired consistency. Dye half the icing a pale yellow and place in piping bags with thin tips. Using white icing pipe out the ribs. Using pale yellow, create the eyes and teeth. Let dry for 4-6 hours or overnight. 

Part 2:

Make the second batch of royal icing and dye some brown, some green and some black. 

Once the cookies have cooled, pipe out the outline of each zombie and fill in using the appropriate colours. While the icing is wet add on the dried ribs eyes and teeth. Pipe over the teeth with the black icing to create a mouth and eyes. Let dry completely before drawing on the blood and stitches.

Using a little bit of royal icing glue the cookies together and fill the center in with strawberry syrup. Let set for 15 minutes.
