Summer Sangria Three Ways

This is one of my favourite cocktails to enjoy in the summer and depending on how hot the weather you can play with how you serve it.

Peach Strawberry Sangria – 3 Ways

Yields: 1 pitcher

1 inch ginger

1 lemon

1 peach

2 cups strawberries

3 tbsp sugar

1 bottle of dry rose or sauvignon blanc or ginger ale for non-alcoholic

2 oz Peach Schnapps or apple juice

1 cup Soda Water

For the sangria, peel and slice the ginger thinly. Thinly slice the lemon, peach and strawberries and place in a pitcher alongside remaining ingredients. Let sit for at least 30 minutes before serving.

For the sangria slushy, grate the ginger into a food processor, squeeze in the juice of half a lemon, add cubed peach. Blend until smooth. in a large bowl or pitcher combine pureed fruit,  sugar, wine and peach schnapps. Stir to combine and then place in an ice cream maker. Turn on machine and follow manufacturers directions for a slush drink. Once the drink has become slushy, in a food processor blend up the strawberries. To serve, scoop out some of the peach slushy and they swirl through the blended strawberry.

For the popsicles, place thinly sliced peach and strawberry into the popsicle moulds. In a large bowl, grate in the ginger, squeeze in half the lemon and combine. Pour in the sugar, wine, and peach schnapps. Gently pour into the moulds and freeze for 30 minutes. Once slushy add in the popsicles sticks and continue freezing until solid.
