“I’m letting life hit me until it gets tired. Then I’ll hit back. It’s a classic rope-a-dope.” – One of my favourite lines from one of my favourite 2017 movies. In honor of awards season I’m celebrating my top Oscar contenders.
2 Chicken breasts
1 cup Buttermilk
1 cup flour
2 tsp baking powder
¼ tsp garlic powder
Vegetable oil for frying
¼ cup maple syrup
2 tbsp orange juice
The zest of one orange
Waffles – from pancake mix
Cut chicken breast into 1 inch pieces and place in a large freezer bag with buttermilk and a good pinch of salt. Let sit in the fridge for one hour.
Heat vegetable oil to 360˚ F in a deep fryer or large pot.
Whisk together flour, baking powder, pepper and little more salt and garlic powder together in a shallow dish. Remove the chicken from the buttermilk and coat in the flour. Skewer 3 pieces onto a bamboo skewer. Place in hot oil and cook through 3-5 minutes until golden.
For the syrup, mix maple syrup, orange juice and orange zest together. Serve the cooked chicken on top of a hot waffle and drizzle with citrus syrup.
